OREANDA-NEWS. On 09 June 2009 was announced, that to recap, in autumn 2008 Altay grain processor PAVA launched a new sort of flour “Zhitnitsa”. In spring 2009, the company made a decision to offer more varieties of this product.

The new wheat flour now comes in three categories: first, second and third. They differ in quality characteristics, applications in bakery manufacturing and price. The purpose of the assortment increase was to attract more baking plants to the new product. The company partners could benefit from lowering the cost of production, and use ‘Zhitnitsa’ in manufacturing bread for healthy nutrition or ‘social’ bread.

The lowest price segment is represented by ‘Zhitnitsa’ flour of the 1st category. This grade is perfect for vitaminizing bakery and reducing its cost. The 1st category flour can be incorporated in flour mixes with a share up to 40%.

‘Zhitnitsa’ flour of the 2d category is the most flexible and multi-purpose product. This flour can be used alone and in mixes with any traditional grade. One of its ideal applications is production of crispy dry breads and gingerbreads; it can serve as a base for the ‘kvass’ drink (bread juice), and enable bakers to increase bread assortment.

The 3d category of Zhitnitsa is a standalone product which allows bakeries to develop new creative formulas for medicinal and prophylactic bread, or get additional gains from lowered cost of ‘social’ bread manufacturing.

It should be noted that in the production process ‘Zhitnitsa’ behaves like a standard grade flour, but also adds a number of benefits. Among them are cost-cutting and modification of the existing range which increases the company’s earnings.
