OREANDA-NEWS The share of domestic fish in the menu of Russian restaurants is growing, guests of establishments are also interested in it, but it is not always easy to work with such products — due to logistical difficulties and often high cost, it follows from the words of industry representatives interviewed by RIA Novosti.

"Since 2016-2017, the share of domestic fish and seafood (in Moscow restaurants) has grown from 20-30% to 70-80%," said Alexey Yashaev, chef of the Atlantica Seafood restaurant in Moscow. As the general manager of Tanuki Family Alla Bondarenko noted, Murmansk salmon in the Tanuki restaurant chain has already completely replaced Faroese today.

"If we talk specifically about salmon, the most popular fish for Japanese cuisine, now we have 100% of domestic supplies. We have completely switched from Faroese salmon to Murmansk salmon," she said, adding that the Tanuki Family also includes Kaspiyka fish restaurants, and about 80% of the fish menu is allocated to Russian and local fish and seafood.
