OREANDA-NEWS   From January to September last year, sales of ready-made sushi and rolls increased in Russia by 83 percent in monetary terms and by 90 percent in physical terms, compared with the same period in 2024. These conclusions of NTech analysts were quoted by Vedomosti.

It turned out that the total volume of this market has grown to 22 billion rubles. At the same time, sales of all fish products excluding canned food, sushi and rolls increased by only 16 percent over the same period (to 476 billion rubles).

It is noted that sales of ready-made sushi and rolls are gaining momentum against the background of the fact that there are fewer and fewer sushi bars in the country. For example, in February of this year, 1,800 such points were operating in megacities. A year ago, this figure was nine percent higher.

According to Yan Dmitrenko, co-owner of the Honest Fish chain, the situation is getting worse due to the rising cost of production against the background of rising prices of fish, cheeses, logistics, packaging, rent, as well as increased wage costs. As a result, restaurants are forced to either raise prices or reduce portions.
