OREANDA-NEWS By the end of 2025, the volume of red caviar production in Russia increased by 21% to 12.4 thousand tons, and the output of black caviar increased by 9% to 89 tons, the analytical center of the Fish Union reported.

"Salmon caviar production increased by 21% to 12.4 thousand tons... The volume of sturgeon caviar production increased by 9% to 89 tons," the report says, citing Rosstat data.

The union noted that the growth in the production of salmon caviar is accompanied by a double-digit rate of decline in its prices in the wholesale market. Prices for pink salmon caviar decreased both in wholesale and retail.
