In Russia, GOST standards for salmon caviar have been updated

OREANDA-NEWS GOST standards for salmon caviar have been updated in Russia to strengthen quality control and combat counterfeiting, Rosstandart said in a statement.
"GOST standards for salmon caviar have been updated to strengthen quality control and combat counterfeiting. Rosstandart has approved updated standards for granular salmon roe: GOST 1629-2026 "Granular salmon roe in shipping packaging. Technical specifications"; GOST 18173-2026 "Canned salmon caviar. Technical specifications," the message says.
The ministry explained that the standards are aimed at improving the quality and safety of products, improving control methods, and reducing the risks of adulteration in the production and turnover of caviar.
The formula for converting sodium benzoate to benzoic acid has now been established to avoid dosage manipulation. In addition, the requirements for temperature control of frozen products have been updated. In turn, GOST for salmon granular caviar in a jar provides for the use of raw materials only from live or fresh fish.
"The standard for the mass fraction of salt has also been established: from 3 to 6% for caviar of the first grade; from 3 to 7% for caviar of the second grade," the report says.
The documents will enter into force on June 1, 2027.
