OREANDA-NEWS. October 06, 2016. To better serve the growing vegan population, fruit juice producers can now rely on the Filtration Division of diversified power management company Eaton for pure vegan fining agents.

Fruit juice producers can substitute gelatin with pea or potato protein easily and directly without any adaption of the established fining process and no special tools or additional equipment. SIHA Pea Protein or SIHA Potato Protein can be combined with Eaton’s SIHA Bentonite and, optionally, silica sol fining agents to improve the clarification effect and fruit juice stability. Pea or potato protein will be added to the fruit juice first, in the second step bentonite will follow. Silica sol should be added last for the best fining result.

Today, fruit juice producers use gelatin as a fining agent to clarify and stabilize fruit juices prior to filtration and bottling. Because gelatin is an animal byproduct, it does not meet vegan dietary guidelines. The alternatives, pea and potato protein, which Eaton sells under the SIHA brand, serves as substitutes for gelatin in fruit juice processing. Vegan consumers as well as those religions that prohibit pork consumption can now add fruit juices, filtered with these products, to their diets.

"Today’s consumers want alternatives to gelatin fining,” explained Dr. Ilona Schneider, an enologist involved with product management beverage treatment and research and development at Eaton’s Filtration Division. “We are pleased to offer two that are vegan and free of genetically modified organisms and allergens. It is also in agreement with kosher dietary requirements.”

To enhance the clarification effect of fruit juices prior fining, fruit juice producers can use Eaton’s Panzym® YieldMASH XXL enzymes, for instance. Enzyme treatment positively influences the filterability and facilitates the fining process by breaking down the high molecular structures of pectins and glucans at the beginning of the fruit juice processing. Eaton’s vegan fining product range is rounded off by SIHA Activated Carbon powder correcting color and odor deficiencies and off-flavors prior bottling.
