Production of red caviar in Russia increased by 18% in 11 months

OREANDA-NEWS The production of natural salmon and sturgeon caviar in Russia in 2025 is steadily growing against the background of a decrease in the production of their imitated and structured analogues, the Rosselkhoznadzor reports.
According to FGIS VetIS, 12.1 thousand tons of salmon caviar were produced in the country in 11 months, compared to 9.9 thousand tons a year earlier. The production of sturgeon caviar increased by 11%, to 88 tons from 79.2 tons a year ago.
"Against the background of the growth in the production of natural caviar, the production of its analogues continues to decrease. Thus, the production of red simulated caviar decreased by 53%, to 279 tons from 615 tons, and structured caviar - by 27%, to 385 tons from 534 tons. The production of black imitated caviar decreased by 5%, to 166 tons against 174 tons a year earlier," the service reports.
The production of structured and simulated caviar has been steadily declining over the past four years. In 2021, almost 2.1 thousand tons of red simulated caviar were produced, 1.9 thousand tons of structured caviar, and 346 tons of black simulated caviar.
"The decrease in the production of caviar analogues reflects a change in consumer preferences and the gradual transition of the market to higher-quality and natural products," the Rosselkhoznadzor believes.
The agency explains that structured and imitated caviar is not actually real caviar, but is a "caviar fish product" (caviar mass with complex food additives). Seaweed and animal protein, as well as a number of food additives, are used to make simulated black caviar. The manufacturer must inform about this on the packaging.
"On the eve of the New Year, the Rosselkhoznadzor urges to pay attention to the labeling of products, especially the name and composition, and not to allow unscrupulous manufacturers who call caviar fish products "caviar" to mislead themselves," the service said.
"This morning, in one of the educational institutions located in the village of Gorki-2, Odintsovo city district, a minor stabbed a security guard and one of the students. As a result of the injury, the child died," the Investigative Committee said.
A criminal case has been opened under the article on murder and attempted murder (Article 105 of the Criminal Code, Part 3 of Article 30, part 2 of Article 105 of the Criminal Code). All the circumstances of the incident are being established.
According to the Moscow region police, the emergency signal was received at 9 a.m. According to the report, "a school student stabbed a security guard, sprayed a gas canister, and then stabbed a ten-year-old student, who died from his injury."
